Andrew and Brian Symington founded the independent bottler, Signatory Vintage, in 1988. In 2002, Signatory Vintage was enlarged by the acquisition of the Edradour distillery. The 'The Un-Chillfiltered Collection' of Signatory Vintage contains only whiskies which are bottled at 46% by volume and are not cold-filtered. This whisky matures for 13 years in hogshead casks and is bottled with its natural colouring. Distilled: 12.06.2007 Bottled: 09.11.2020 Limited to 335 bottles worldwide. Tasting notes:Colour: Rich straw gold. Nose: Green apple skins, unripe pears, vanilla, lemon cake, grapefruits, powdered sugar. Taste: Peppery, fruity, green apples, pears, vanilla, honey, peaches. Finish: Long lasting, gentle peat smoke.
